Reed and Karen's Vegetarian Dinner!

Reed and Karen found some nice recipes on theveganstoner.com.  But, they revised them to make them vegetarian instead of vegan.  They used cheese and milk in some of the recipes.  :)


Enchiladas
Cut Crescent roll dough into triangles.  
Stack ingredients and cheese on dough.  (They had veggies and cheese.)
Roll and bake on a baking sheet and bake for 10 min. at 375 degrees.
Top with enchilada sauce, tomatoes, cilantro and avocado.

Onion Rings
Slice half an onion into rings.
Mix a spoon of corn starch with 1/4 c flour and half cup of milk.
In another bowl, mix about a half spoon of salt (cut down from original recipe) with a spoon of olive oil and a half cup of bread crumbs.
Dip onion rings in flour mixture, then bread crumbs and place on baking sheet.
Bake for 8 minutes, flip, then bake for another 6 minutes.

Fruit Drink
Reed and Karen's own drink recipe.  
Freeze fruit juice into cubes.
Place a cube in a glass and add ginger ale.

Peanut Butter Bars
Melt a bag of chocolate chips in microwave.
Pour half into a pan and freeze.
Mix half cup peanut butter with enough powdered sugar to make a stiff dough.
Place mixture on frozen chocolate.
Spread remaining chocolate on peanut butter mix, decorate if desired and freeze until set. 
Let stand at room temp until able to cut into bars.
